DIY Recipe: Cannabis-Infused Ice Cream Sandwiches

Whenever I hear the sound of an ice cream truck, I start craving ice cream sandwiches. These sweet snacks may send your taste buds back to childhood, but a cannabis-infused version is perfect for all of the cannabis-loving adults in your life. It’s a great way to satisfy your cravings for ice cream—and medicate at the same time.

This ice cream sandwich version uses an easy marijuana-infused ice cream recipe that doesn’t even require an ice cream maker. Just mix up your ingredients and stick them in the freezer. The next day, you’ll be ready to make your cannabis-infused ice cream sandwiches.

You can also let your creativity run wild with this one. There’s no end to the combinations of flavors you can achieve with different varieties of ice cream, cookies and toppings.

So, keep it simple with classic vanilla and chocolate, or mix it up with your favorite flavors—the choice is up to you.

And though this may not be the healthiest marijuana edible recipe out there, it’s important to note the importance of fat in edibles. Cannabinoids in cannabis are lipophiles, meaning they’re fat soluble. In other words, fat is what breaks them down so that your body can use them. So, your cannabis edibles should contain fat if you want to get the most therapeutic value out of your cannabis.

Ingredients for Cannabis-Infused Ice Cream Sandwiches

  • 4 tbsp cannabutter—soft or melted*
  • 2 cups whipping cream
  • 1 can (14 oz) condensed milk
  • 1/2 tsp vanilla extract
  • Your choice of flavoring**
  • Your choice of cookies**
  • Your choice of toppings**

*Everyone’s different when it comes to dosing, so use your best judgment based on your previous experiences with edibles. If you have a lower tolerance to cannabis, use a smaller dose. If you aren’t sure about how much cannabis to include, start low; a good starting dose is 5 mg. If you find your cannabutter is too strong, you can substitute some regular butter in to lower the potency of your ice cream sandwiches.

**You can make this recipe with your own choice of flavors, cookies and toppings. For the ice cream, you can stick with vanilla or add in the flavor of your choice. Then, pick a cookie—store bought or homemade—that goes well with your flavor. You can even add toppings to the sides of your sandwich like sprinkles, nuts, cereal or chocolate chips.

Here are a few ideas for your ice cream sandwich variations:

  • The Classic Chipwich: Vanilla ice cream on chocolate chip cookies
  • The Mint Cookie Crunch: Mint ice cream (add 1/4 cup chopped fresh mint to the ice cream mixture) and mint chocolate cookies, coated in mini chocolate chips
  • The Sweet Treat: Strawberry ice cream (add 1/4 cup chopped fresh strawberries to the ice cream mixture) and sugar cookies, coated in Fruity Pebbles cereal
  • The Ice Cream for Breakfast: Maple ice cream (add maple syrup to the ice cream mixture) and waffles
  • The Chocolate Lover: Chocolate ice cream (add chocolate sauce to the ice cream mixture) and Dutch chocolate cookies, coated in chocolate sprinkles
  • The Ice Cream Nut: Peanut butter chocolate ice cream (add 1/4 cup peanut butter and chocolate sauce to the ice cream mixture) and chocolate peanut butter cookies, coated in crushed peanuts

How to Make the Cannabis-Infused Ice Cream

  1. In a medium mixing bowl, use a whisk to whip your cream until stiff; set aside.
  2. In a large mixing bowl, add cannabutter, condensed milk, vanilla extract and your choice of flavorings. Mix these ingredients thoroughly, and then gently fold in the whipped cream that you previously set aside.
  3. Add a lid to the bowl with your ice cream mixture and put in the freezer to set for at least six hours.
  4. Once your ice cream has set, assemble your ice cream sandwich ingredients: the ice cream, your cookies and any toppings you’d like to add.
  5. Flip a cookie upside down and add a scoop of ice cream on top, using a spatula to spread the ice cream evenly if needed.
  6. Then, take a second cookie and add it on top of your ice cream. You may want to press down slightly to even out the ice cream—but don’t press too hard or the ice cream will start to come out of the sides.
  7. Next, if you have toppings, pour your toppings out onto a plate, and roll the edges of your sandwich in them until all the visible ice cream is coated.
  8. Place the ice cream sandwich on a baking sheet and repeat the steps above until you’ve made all of your ice cream sandwiches. Then, put the baking sheet in the freezer for 20 minutes or until the ice cream sandwiches are firm. (If you’re using waffles for your sandwich instead of cookies, skip this last step and enjoy your ice cream on hot waffles as soon as you put them together.)
  9. Once firm, you can enjoy immediately or leave in the freezer until ready to eat.
